Raise the Bar! – Sour Cream Cranberry Bars

INGREDIENTS

  • 1 C. Margarine (not spread, Land O Lakes preferred)
  • 1 C. Brown Sugar
  • 2 C. Quick Oats
  • 1 1/2 C. Flour
  • 2 C. Dried Cranberries (usually in pieces in bag)
  • 1 C. Sour Cream
  • 2 Tbsp. Flour
  • 3/4 C. Sugar
  • 1 Egg (beaten)
  • 1 Tbsp. Dried Lemon Rind
  • 1 tsp. Vanilla Extract

METHOD

  1. Cream margarine and brown sugar. Add oats and flour, mix until crumbly.
  2. Save 1 1/2 cups for topping, pat remainder into greased 9″x13″ pan.
  3. Bake at 350 degrees about 12 minutes.
  4. Mix together all remaining ingredients until smooth.
  5. Spread over baked crust and add topping. Bake another 20-25 minutes or slightly browned.
  6. Cool and cut into 30 portions. Refrigerate.
