INGREDIENTS
- 1 C. Margarine (not spread, Land O Lakes preferred)
- 1 C. Brown Sugar
- 2 C. Quick Oats
- 1 1/2 C. Flour
- 2 C. Dried Cranberries (usually in pieces in bag)
- 1 C. Sour Cream
- 2 Tbsp. Flour
- 3/4 C. Sugar
- 1 Egg (beaten)
- 1 Tbsp. Dried Lemon Rind
- 1 tsp. Vanilla Extract
METHOD
- Cream margarine and brown sugar. Add oats and flour, mix until crumbly.
- Save 1 1/2 cups for topping, pat remainder into greased 9″x13″ pan.
- Bake at 350 degrees about 12 minutes.
- Mix together all remaining ingredients until smooth.
- Spread over baked crust and add topping. Bake another 20-25 minutes or slightly browned.
- Cool and cut into 30 portions. Refrigerate.
