Nutrition Knowledge – Packing ‘Healthy’ Into Lunch

Going back to school often brings a flurry of activity, planning and purchasing of school supplies, and don’t forget the right supplies for packing lunches. There are many ways to have exciting lunches that our children will love while still giving them a healthy meal. By packing our own fruits and veggies, we are not limited to what is available in prepackaged portions. Include carrots, celery, cucumbers, bell pepper strips, broccoli, cauliflower and grape tomatoes, as well as orange sections, bananas, apples, strawberries, blueberries, grapes and peaches.

A good lunch bag/box, freezer packs and a stainless steel insulated container are essential. Plastic containers for the other items are reusable, and help us stay as “green” as possible when it comes to packaging.

Involve the children in lunch planning and packing. Ask for a list of favorites and encourage them to include one veggie and one fruit choice each day. Be creative here, including leftovers, wraps and “roll ups” using whole grain tortillas, and even hot leftovers or other hot items in an insulated container. Try to encourage variety and stretch your child’s personal menu.

Older children can prep the actual entrée items; while younger children can count out pretzels, crackers, baked chips, slices of veggies or chunks of fruit. Include a small “dessert”, too, such as a bite-sized piece of candy as their treat. Send along a bottle or canteen of water if they are not purchasing milk at school.

While packing our own lunches takes a bit more time and planning, the health benefits far outweigh the small amount of time it takes. Build that packed lunch plan around the healthier choices that are offered by the school district, and always keep good nutrition at the top of the list.
