Kids Corner – Denver egg scramble

With the hustle and bustle of the holidays and all the running around I see my mom do, I thought it would be nice to stay in and cook for her.

Jack_morrisseyI chose to do a Denver egg scramble.

My first ingredients were 6 fresh cracked eggs with 2 tablespoons of milk mixed well with a dash of salt and pepper. (Note, when cracking the eggs it is always good to hold the bowl in one hand so it does not slip off the counter. Otherwise, you will be cleaning up messy eggs from the floor like I did!)

I put the egg mixture aside, then I chopped a green pepper and an onion. I then melted 2 tablespoons of butter in the pan. Over medium heat, I began heating the vegetables. When they were getting a little bit soft, I took them off the heat and began chopping up a slice of ham.

I then took two tablespoons of vegetable oil and heated it up and then poured a half bag of frozen hash browns in the skillet and began browning them, about 8 minutes per side.

At the same time, I added the ham to the green pepper and onion mixture and began warming it. When heated, I added my egg mixture and began scrambling it. When the eggs became fluffy, I added ½ cup of shredded cheddar cheese.

I then toasted some English muffins and washed some grapes. What a beautiful meal!

Mom said it was better than a restaurant because I made it!
