Nutrition Knowledge – Healthy harvest all winter long

Many of us are harvesting the summer bounty of fabulous produce from our gardens or local farmer’s markets. Preserving this garden goodness to enjoy in the winter months can be simple and so beneficial.

Canning is one way, although it is a bit time-consuming and does require some equipment. Freezing is a bit easier and a very effective choice for many foods. Blanch vegetables prior to freezing to lock in nutrients and color, and use a good quality freezer bag or food saver that allows air to be removed. Preparing soups, stews and sauces now with fresh ingredients in big batches, then canning or freezing in portions, is delicious in the colder months, and also a fabulous way to make healthy, quick dinners during the school year.

Dehydrating is very effective for most of the fruits and veggies we eat. Purchasing a dehydrator that is specifically meant for this is ideal, although most of the modern ovens have a low “dehydrate” setting. Store the dehydrated foods in an airtight container or bag, and use them all year long. Use the veggies in soups, stir-fry and stews; the fruits can be eaten for a snack, or rehydrated for recipes and baking.

Fermenting veggies is another way to preserve, and it ups the ante on our probiotic intake. Cabbage, carrots, cucumbers and onions are all good fermented.

Pickling is often thought of for cucumber varieties, but we can also pickle radishes, carrots, red onions and cauliflower. These end up being great for salads or snacking.

Finally, another way to preserve the summer season’s goodness is to mince up herbs and place into ice cube trays that we then fill with olive oil. Freeze these, then pop them out and into a container and use the “cubes” for preparing meals.
