Raise the Bar! – Glazed Rum Raisin Bars

INGREDIENTS
1/2 C. Water
1 C. Raisins
2 C. Flour
3/4 C. Sugar
1 C. Margarine (not spread, Land O Lakes preferred)
1/2 C. Milk
1 Egg
1 tsp. Salt
1 tsp Baking Powder
1/2 tsp. Rum Extract

GLAZE
1/4 C. Margarine
3/4 C. Powdered Sugar
1/2 tsp. Rum Extract
1 Tbsp. Water

METHOD
1. Combine water and raisins. Cook over medium heat until water boils, stirring constantly for 2-3 minutes.
Drain off water and set aside.
2. Combine all remaining ingredients except raisins, beat together until well mixed.
3. Stir in strained raisins and spread into greased 9″x13″ pan.
4. Bake at 375 degrees about 20-25 minutes, or a toothpick test comes out clean.
5. Meanwhile, combine all glaze ingredients and cook over low heat, stirring until smooth and clear.
6. Allow baked bars to set for 10-15 minutes, and then spread glaze over warm bars.
7. Cool and cut into 30 portions.
