Teen’s Taste – Chicken Caesar salad

Summertime means easy living and having fun in the sun. So for this month’s column, I decided to take the readers home for a super-fast and easy dinner I’ve prepared for my family.

I found a great recipe online for Caesar salad, but we put a spin on it. We made a chicken Caesar salad.

The dressing was key and what made the salad so good. The dressing called for olive oil, lemon juice, anchovy paste, ground mustard, salt, garlic powder and Worcestershire sauce. All mixed together, the ingredients created a tasty dressing that we added to romaine lettuce and tossed together.

After mixing the dressing and the salad, we added lots of croutons and Parmesan cheese and a bit of grounded black pepper for taste. We sat the salad aside and then we grilled four large chicken breasts. We prepared them two different ways—one was a classic grilled chicken and the other one was more of a spicy marinated grilled chicken.

We cut the chicken breasts into long strips and served the chicken over the salad. This meal was full of flavor and well worth any amount of time you put into it.

So next time the sun is shining and the kids want to head to the Centennial Beach, leaving little time to fix dinner, make this simple chicken Caesar salad. I hope you give this recipe a try, and tell your family Jack the Foodie did.
