Scanning the participating businesses in Naperville Restaurant Week, we were happy to find Eggs, Inc. Cafe on the list.
Located at 220 S. Washington Street, Eggs, Inc. Cafe – specializing in “old school service and professionalism” – offers a breakfast menu full of omelets, pancakes, skillets, crepes, blintzes and much more for lunch. They are open 7AM to 3PM daily.
As we entered the packed restaurant, we spied fellow Sunrise Rotarians Sharon and Bill Thompson finishing breakfast with daughters, Lauren and Olivia. Olivia turned 12 that day and was enjoying a huge Red Velvet birthday cupcake.
While server Donnie poured coffee, we were deciding – and that in itself was a challenge.
Finally, Laurie ordered Irishman Benny – two poached eggs atop toasted English muffins, corned beef hash, sautéed tomato finished with hollandaise. Add a side of the special Lemon Blueberry Pancakes topped with homemade Mascarpone and Laurie commented “We might have to move downtown so we can walk here every day”.
An Irishman not to be outdone, Mark selected the Irishman Skillet – corned beef hash (of course), onions, melted Monterey Jack and Cheddar topped with two eggs – over easy. Add a side of Red Velvet pancakes topped with (you guessed) Mascarpone to which Mark commented “the best pancakes, ever”.
Open since last October, Eggs, Inc. Café is owned and operated by Gus, Peter and Bill Vassos – a family affair.
As we departed, clutching a “to go” bag containing a future meal, Laurie said, “This meal was so good, we have to come back for lunch – but not today.”
And we both agreed, Eggs, Inc. Cafe could possibly be our next most favorite restaurant.
