Kids Corner – Cooking for Mom

This month I decided to stay in our own kitchen. With the help of my friend, Brad, we cooked my mom chicken schnitzel, asparagus and steak fries.

Jack_morrisseyThe key to every great recipe is fresh ingredients. So I started off shopping at my favorite neighborhood butcher/grocery store, Casey’s Foods. The selection of fresh produce made it easy to decide on the asparagus. I also needed two lemons and some fresh parsley. Next I went to the meat department to order six chicken breast split. Casey’s meat department has a large variety of fresh meats for any recipe.

Next we started assembling the ingredients. First, we had to butterfly and pound the chicken breast to ¼ inch thickness.

In three separate bowls we set aside the flour, eggs and panko bread crumbs. We dredged the chicken in the flour mixture shaking off the excess, then we dipped it in the eggs and then we coated it thoroughly with the panko bread crumbs and parmesan cheese.

In a large skillet we heated up two tablespoons of butter and placed three of the chicken breast in the heated butter and cooked until golden brown, about three minutes turning once.

Next I cooked the steak fries for 25 minutes in a single layer until they were golden.

I then prepared the asparagus which was very simple, I poured a little bit of olive oil over the asparagus and seasoned with salt and pepper. I placed the asparagus in the oven for the last ten minutes that the fries were cooking. I then chopped up some fresh parsley and lemon and served the plates.

Everything arranged on the plate was very “color-full” and yummy. My mom said she loved the meal, especially because I prepared it for her!

Cooking can be a lot of fun, especially when you have all the right ingredients and tools. Until next time, may your plate never go empty!
