Raise the Bar! – Cheesecake Squares

CRUST

  • 1 C. Flour
  • 1/2 C. Brown Sugar, packed
  • 1/3 C. Margarine, (not spread, Land O Lakes preferred)
  • 1/2 C Chopped Walnuts or Pecans

FILLING

  • 1 8 oz. Package Cream Cheese
  • 1/4 C. Sugar
  • 1 Egg
  • 2 Tbsp. Lemon Juice
  • 2 Tbsp. Milk
  • 1/2 tsp. Vanilla Extract

METHOD

  1. Mix first 3 ingredients together, stir in nuts. Reserve 1 cup for topping.
  2. Press remaining mixture into greased “8” or “9” baking pan.
  3. Bake at 350 degrees for 8-10 minutes, or lightly browned.
  4. Combine all filling ingredients, beat together until smooth.
  5. Spread over hot partially baked crust, sprinkle with reserved crumb mixture topping.
  6. Bake an additional 25-30 minutes, or until golden brown.
  7. Cool and cut into 25-30 portions.
