Nutrition Knowledge – Windowsills full of flavor … and health!

Many of us are harvesting the bounty from our gardens that are overflowing with goodness and we are able to preserve much of our produce by canning or freezing. However, even though the summer growing season is winding down, that doesn’t mean that we have to forego growing fresh herbs. Herbs are wonderfully adaptable to small pots and windowsill sunlight, and have great health benefits, too.

Use a small pot or container that has good drainage, and keep the soil moist but not soaking wet. The windowsill doesn’t have to be in your kitchen, as the smell and beauty of the plants is enjoyable in other rooms, too. (If you have pets, you will want to keep the plants out of their reach.)

Basil: contains disease-fighting antioxidants, is anti-inflammatory and antibacterial, and its nutrients are good for cardiovascular health.

Dill: is a good source of micronutrients, is antioxidant as well as anti-inflammatory and also has antiviral properties.

Parsley: contains a wide array of nutrients including the B complex and essential minerals, some say that a compound in parsley may be anti-carcinogenic, it is anti-inflammatory and a good source of calcium.

Oregano: has antioxidant properties for immune system support, is antifungal, antibacterial and anti-inflammatory and has been shown to potentially be beneficial for conditions including osteoporosis and arteriosclerosis.

Rosemary: contains manganese (great for antioxidant properties), iron and potassium, as well as the B vitamins, which are so essential for our body’s ability to manage stress.

Thyme: is antioxidant and anti-fungal, but also great for circulation and contains nutrients that are important for heart health.

Take advantage of these herbs (and others) by using them often and abundantly to improve the flavor of meals and for their vast health benefits.
